Ultra Pasteurized Organic Milk




I'm reading this book right now called "Animals Vegetables Miracles" and I LOVE it...recommended from a local organic farmer, it's a true story about a family that leaves the city life to live off a farm, growing all their own food or getting it from local providers.  Doesn't sound like much, but if you like to eat healthy and garden, THIS BOOK IS FOR YOU!

Anyway, as I sit up for a blissfully quiet 4am bowl of organic cereal (I can hear my clock tick tock!)...I am reminded about what the book says about "Ultra Pasteurized Organic Milk" which my Shop Rite brand milk is .. "Ultra."
 
The author says many organic milk brands are "ultra" pasteurized because there are fewer dairies that produce organic milk.  Fewer dairies means more transportation and distribution, which means the milk has to last longer, hence why they overcook it, to get that longer expiration date.
 
The problem with this "ultra" is that it kills even the good parts of the milk...in fact, the milk is so DEAD, that it can't even naturally ferment into cheese!  All other pasteurized milk can ferment into cheese.  She says the "ultra" pasteurization completely changes the chemical structure of the milk, and should be avoided.
 
I'm switching to organic milk that isn't "ultra" pasteurized!
